Brains are not just for zombies. Historically, the brains of pigs (shoats), cattle, and other animals have been considered a delicacy. This recipe appeared in The Kentucky Housewife (1839) by Lettice Bryan. Image courtesy of Library of Congress.

I love this as a primary source to show my students. It is different as it shows how recipes and ways of eating have changed as time progresses. The students will be more engaged as they often seem to love discussing “gross” stuff. Especially because the recipe comes from Kentucky and I teach in Kentucky it will be extremely relevant and relatable to the class.
