Peach Pot-Pie Recipe, 1839

Before enclosed, wood-fired cookstoves were widely available for average homes in the mid-19th century, baking was done on the hearth. The recipes describe how pies were “baked” in an iron pot with a lid; hot coals were placed under and on the top of the pot.
